Mealie Soup Recipe by Kambe Banda

  Description 
  • Corn soup
  •     Serves 6

Ingredients
  •     2 ounces butter
  •     1 cup finely chopped onions
  •     2 tomatoes, chopped
  •     2 cups canned whole corn, well drained
  •     2 cups creamed corn
  •     1 can evaporated milk
  •     3 cups chicken stock
  •     1 tablespoon salt
  •     1 teaspoon black pepper 
 

 








Directions
  •     In a large saucepan, heat the butter over moderate heat.
  •     Add the onions and saute for 5 minutes.
  •     Stir in the tomatoes and cook for a few minutes.
  •     Add the corn, milk, stock, salt, and pepper, and simmer for 15 minutes.
  •     Serve with bread or crackers.

Cabbage Soup Recipe by Kambe Banda

 Ingredients

  •     1 small head of cabbage (cut out the hard core)
  •     water
  •     3 cups milk
  •     1 cup cream
  •     salt and pepper to taste 
 

Directions

  •     Chop finely the cabbage, about 3 cups chopped.
  •     Add water to cover and cook until tender.
  •     Drain off all but 1 cup of the water.
  •     Add 3 cups milk and 1 cup cream.
  •     Season with salt and pepper to taste.
  •     Serve hot.

Peanut Soup Recipe by Kambe Banda

Ingredients

  •     1 pint good stock (preferably made from chicken carcass with one onion
  •     1 pint shelled peanuts
  •     1 cup milk

Directions
  •     Dry peanuts in the oven until the skin can be rubbed off and the nuts are a deep biscuit in colour.
  •     Crush with a rolling pin, or mince, to a very fine meal.
  •     Strain the stock and simmer with the nut meal for ½ hour or more.
  •     Season to taste.
  •     Before serving, stir in milk, or even better, ½ small tin unsweetened condensed milk, add a little butter and serve.

Crayfish Soup Recipe by Kambe Banda

 Ingredients
  •     1 pound crayfish tails (use rock lobster if in the usa)
  •     1 teaspoon salt
  •     4 ounces butter
  •     1 cup onions, thinly sliced
  •     2 tomatoes, chopped
  •     1 clove garlic, minced
  •     1 teaspoon salad herbs
  •     ½ teaspoon nutmeg
  •     1 teaspoon salt
  •     ½ teaspoon pepper
  •     1 piece lemon rind
  •     1 cup dry white wine
  •     ½ cup light cream 
 

 













Directions
  •     Heat 1½ quarts water in a large saucepan to boiling.
  •     Add the lobster tails and salt, and simmer until tender.
  •     Remove lobster tail meat from shells, coarsely chop and set aside.
  •     Reserve stock.
  •     In another large saucepan, heat the butter and sauté the onions for 5 minutes.
  •     Add the tomatoes, garlic, herbs, nutmeg, salt, pepper, and lemon peel.
  •     Cook over low heat for 10 minutes.
  •     Add the wine and 4 cups lobster water.
  •     Boil soup and cook for 10 more minutes.
  •     Force soup through a food mill, then return to the pot.

Cold Buttermilk Soup Recipe by Kambe Banda

 Ingredients

  •     5 slices thin Westphalian-style pumpernickel bread
  •     ½ cup seedless raisins
  •     3 tablespoons sugar
  •     2 teaspoons fresh lemons, rind of
  •     1 teaspoon nutmeg
  •     ½ teaspoon cinnamon
  •     1½ quarts buttermilk 
 

Directions
  •     Preheat oven to 250ºF.
  •     Spread bread on baking sheet and toast until crisp, 30 – 40 minutes, turning once or twice; set aside to cool.
  •     While the bread is toasting and cooling, drop the raisins into a cup of boiling water, soak 5 minutes, then drain on a paper towel.
  •     Grind the toasted bread in a blender or food processor, then rub crumbs through a fine sieve into a deep bowl.
  •     Add the rest of the ingredients, except the buttermilk, and mix thoroughly.
  •     Stirring constantly, add the buttermilk in a fine stream.
  •     Taste for seasoning and refrigerate at least 30 minutes.
  •     To serve, stir well to recombine and sprinkle nutmeg and cinnamon on each serving.

Chilled Carrot and Mango Soup Malawi Recipe by Kambe Banda

 Ingredients

  •     300 g carrots, cooked and thinly sliced
  •     1 tablespoon fresh ginger, grated
  •     450 g fresh mango
  •     300 ml water
  •     60 ml fresh orange juice
  •     1 teaspoon lemon juice
  •     salt
  •     black pepper 
 

Directions
  •     Place all the ingredients except for the black pepper in a blender and process until smooth.
  •     Garnish with black pepper and serve well chilled.

Malawian Sweet Potato Soup Recipe by Kambe Banda

 Ingredients
  •     1¼ lbs sweet potatoes
  •     1 large stalk celery
  •     6 cups water
  •     2 tbsp lemon juice
  •     1½ tbs butter
  •     3 small carrots
  •     1 bay leaf
  •     1½ tsp salt
  •     1 tsp paprika
  •     ½ cup heavy cream 
 

Directions

  •     Peel sweet potatoes and cut them in small cubes.
  •     Scrape and thinly slice the carrots and cut up the celery into pieces.
  •     Put all ingredients in a pot and simmer.
  •     Uncovered- first on high then turning down the heat.
  •     Simmer until the vegetables are soft.
  •     Mash mixture gently with a fork and stir.

It doesn't take brilliant travel minds to tell you that a park is free to visit – most parks are. But most parks aren't Central Park, Manhattan's famed claim to thinking ahead (even if it was designed in the 1860s to boost real-estate value uptown).  It's filled with free events, statues, people-watching and sites like Strawberry Fields, an 'Imagine' mosaic near the Dakota, where John Lennon was killed in 1980. Another site is 'the Pond,' at the southeastern corner, where Holden Caulfield kept turning to in 'The Catcher in the Rye,' wondering where those ducks go when it's cold. Eiffel Tower Tour Place by Kambe Banda
Visiting the iconic symbol of Paris usually ranks as the number one thing to do for most tourists. Towering more than 1,000 feet (300 meters) high in the Champ de Mars park, this iron structure was constructed for the 1889 World Exposition. One of the world’s most photographed tourist attractions, the Eiffel Tower presents an excellent photography opportunity for both day and night times. Visitors can ride the elevator to see incredible views of the city or dine in one of the two fine restaurants that are situated within the tower.

Arc de Triomphe Tour Place in Paris
One of the most popular tourist attractions in Paris, the Arc de Triomphe was constructed in 1806 to memorialize the triumphal battles of Napoleon Bonaparte. Standing 164 feet high and 148 feet (50 by 45 meters) wide, the arch features intricate reliefs depicting victorious battles and engraved names of many who died fighting for the emperor. Beneath the arch is the Tomb of the Unknown Soldier from the first world war.

Travel Place Centre Pompidou in Paris by Kambe Banda
Designed in the style of high-tech architecture, Centre Pompidou is a cultural institution in the Beaubourg area of the 4th arrondissement. It houses a vast public library, the Musée National d’Art Moderne which is the largest museum for modern art in Europe, a bookshop, a movie theater and a panoramic terrace. The library occupies the first three floors of the building, while the museum’s permanent collection is located on floors 4 and 5. The first and top floor are used for large expositions. The Centre is named after Georges Pompidou, the President of France from 1969 to 1974 who commissioned the building.

Begun sometime after 1239, the Sainte-Chapelle is considered among the highest achievements of Gothic architecture. Its construction was commissioned by King Louis IX of France to house his collection of Passion Relics, including Christ’s Crown of Thorns, one of the most important relics in medieval Christendom. Although damaged during the French revolution, and restored in the 19th century, it retains one of the most extensive in-situ collections of 13th-century stained glass anywhere in the world.

Place de la Concorde
At the east end of the Champs-Elysées is Place de la Concorde, the largest square in Paris with fantastic vistas in every direction. It was in this square that the French King Louis XVI, Marie Antoinette and many others were guillotined during the French revolution. The large 3200 years old Egyptian obelisk in the center of the Place de la Concorde was brought from the Temple of Luxor in the 19th century.
